Medhu Vadai - A crispy treat

Medhu Vadai also known as Ullunda Vadai is a popular South Indian snack which forms an essential part of the menus savoured during festivals.It is typically and traditionally served along with a main course such as Dosa, Idli, or Pongal. Hot and crunchy vadai is served with wide varieties of  chutneys.





Ingredients:


  • Ulutham paruppu / whole black gram --> 1 Cup        
  • Rice -------------------------------------------------->1 Teaspoon
  • Green Chilly -------------------------------------->4 or As required 
  • Onion[Finely chopped]-----------------------> 1 number
  • Salt --------------------------------------------------->As required
  • Oil ---------------------------------------------------->As required
  • Curry Leaves [Chopped]---------------------->1 or 2 sprigs
  • Ginger[Chopped] -------------------------------> 1/2 Teaspoon

Method:

1.       Soak the Urad dal and Rice in water for 2 or 3 hours. Rice here acts as a binding agent.

2.      Drain the water completely and grind it in a mixer for 20-30 minutes such that the dough should  be fluffy and stand in a place.

3.      Add the onion,ginger and curry leaves to the batter and mix well.

4.      Take thick plastic sheet/Banana leaf for making vada.

5.      Heat the oil and gently slid the vada into it.

6.      Fry till they become crispy and brown.


Note: Batter should be immediately used otherwise vadai will consume more oil.
